Zaria

Zaria is a varietal made from the indigenous white Vipava varieties Pinela, Malvazija, Welsh Riesling, Zelen and Vitovska. Zaria is produced according to the traditional Vipava process of ‘vipavec’.

Zaria, like other Batič wines, is all about the grapes. The chosen locations, the extremely low per hectare yields, the biodynamic cultivation of the vineyards, the knowledge of the language spoken by nature and farming according to its laws are the main guides to Zaria.

The harvesting of the vineyards signing Zaria was carried out in a selective way in two stages. The Malvasia and W. Riesling were harvested on 12, 22 and 23 September. Both varieties were enriched with a high proportion of botrytis noble in 2022. Pinela, Zelen and Vitovska were harvested a day later on 24 September. Zaria 2022 was in contact with the berry skins for two months. Maturation in a 35hl oak barrel followed. After 22 months of maturation, in August 2024 Zaria will be bottled without filtration and without finning.

The natural sediments formed in the wine nourish and protect the wine. Zaria’s intense colour is a reflection of the very low yield per hectare, the botrytised grapes and the way the wine is matured. Zaria tastes completely different from the wines of the 21st century. With Zaria, we wanted to revive a classic and, at the same time, the only way of making wine that gives it the power of medicine and joy.
