Merlot is grown on eight sites. Each vineyard site is vinified individually, the larger sites are vinified in several parts depending on the exposure. The vinification and ripening of Merlot varies from one vineyard to another, due to the specific characteristics of each vineyard. On all the merlot vineyards, the vines are thinned over the summer and only a good third of the initial grapes are retained – approx. 2 t/ha. A year after harvest, a blind tasting of all the merlots determines the selection and proportion of wines that will sign the Selection line or the top quality Angel line.
The 2023 Merlot Selection is the signature of the Breg, Pod Visoko and part of the Livišče appellations. The Merlot Selekcija was fermented on the skins until the end of its fermentation. Maturation in selected oak barrels followed. After 30 months of maturation, the 2023 Merlot Selekcija was bottled unfined and unfiltered.
