Valentino is a wine made from dried grapes of mixed varieties. The grapes for Valentino White are produced completely without any spraying. The wine is a signature of the finest, healthiest harvests. In early October, the grapes begin to be harvested into wooden crates, in which they dry naturally in a dry and windy place until March. During this time, the grapes produce raisins, the flavour of which lingers on in Valentino.
Before pressing, each bunch is inspected again. After a week of sorting, pressing begins. The initial 20 kg of grapes harvested yield approximately 1 l of Valentino.
The Valentine is then racked into 225 litre oak barrels. Valentino ripens in these barrels for 24 to 60 months. Valentino is bottled by hand – one barrel at a time, according to biodynamic principles, at the appropriate time of the moon.
