In 1987, the first Slovenian Bati\u010d bottle is launched. Since then, we have been producing Rose Bati\u010d only from high quality Cabernet Sauvignon grapes. This is the reason why, from 1987 onwards, for the next three decades, the Bati\u010d winery did not bottle a single bottle of Cabernet Sauvignon in red. Today, Cabernet Sauvignon is complemented by a portion of Merlot.<\/p>\n\n\n\n
During the summer months, the vineyards dedicated to Ros\u00e9 are relieved of their burden to such an extent that only up to half a kilo of grapes grown according to the principles of biodynamic farming remain on the vines. The low per hectare input results in a higher pigment concentration in the berry skin. As a result, Rose Bati\u010d is darker in shade than most of the world’s most revered Ros\u00e9s. To preserve freshness, the wine is aged in inox containers. Rose Bati\u010d is fermented without the addition of selected yeasts. It is bottled at the first signs of spring during the waxing moon. Rose is drunk as a young wine. The low yield of grapes per hectare gives Rose Bati\u010d above-standard longevity.<\/p>\n\n\n\n
Thus, the first part of the Bati\u010d Rose is put on the market in the first spring after the harvest. The last 1 000 bottles of the latter are available after ten years of maturation in the bottle. <\/p>\n\n\n\n
