COLOUR: Intense yellow with gold tones.

NOSE: Extremely pure and fruity. Pineapple notes with a hint of tropical fruit (papaya, mango) dominate, with a touch of pear.

TASTE: We are greeted by a pleasant harmony and a developing full and fresh, persistent taste. This is an extremely harmonious Chardonnay.

Lovely freshness and abundance of minerals. High alcohol content notes, quite notable at first, soon blend nicely into the whole story.

This first taste anticipates a development in perfection and elegance over the following twenty years. The wine will be in its prime from 2011 on.

HARVESTING TECHNOLOGY: An old Vipava Valley winemaking method was used to make Chardonnay 06. Grape reduction was carried out in the summer and over-ripe grapes were manually harvested in mid-September.

The wine was macerated at unregulated temperature for three days. Wine was fermented with natural yeast only and matured for fifteen months in Slovenian oak barrels. The whole of the process from harvesting to bottling took place under the old moon.

BATIČ CHARDONNAY 06 & FOOD:
Due to its rich structure, Chardonnay 06 pairs very well with stronger tasting dishes (lamb, young goat).

Combinations with smoked fish (salmon, bass), exotic risotto, shrimps,… can be very interesting and rewarding.

Chardonnay 06 goes well with different cheeses – from young to mature or blue cheeses.
