COLOUR: Medium intense straw, radiant and calm. Substantial tears anticipate the story of wine.
NOSE: Excellent, pure and clear, a complex note of exotic fruit and freshly mowed grass. Harbal and floral scents in the background, with subtle notes of spiciness.
TASTE: Bonisimus creates a perfect harmony of taste in the mouth. The wine is succulent, soft, mineral with a buttery texture. A very long, creamy finish.
A perfect elegance despite the strong backbone. A wonderful and intense character, with Pinot Gris providing the finesse, Chardonnay the structure and Ribolla the freshness, while Pinela adds to the wine's unique character.
The wine's name itself anticipates the story of Bonisimus.

HARVESTING TECHNOLOGY:
Individual grapes from the best terroir were hand-picked and manually selected.
Pinela and Chardonnay were each macerated in open vats at an unregulated temperature for five days, while the other two sorts were not macerated.
The grapes fermented with natural yeast only. Each of the four sorts matured separately in 225l Slovene-oak barrels.
After the process of maturing was finished, the noblest barrels were chosen to make the Cuvee Bonisimus.
The wine was then matured in bottles for another six months. Bonisimus is a wine that only the best harvests bring to life.
